Cream of asparagus soup

Ingredients:

  • 500 g white asparagus
  • 1,5 l broth
  • 1 onion
  • 2 medium sized potato
  • 30 g butter
  • Salt, pepper

How to make it:

  • Peel and rinse the vegetables. Chop them up to small pieces. Cut off the woody ends of the asparagus and throw them away.
  • Sauté the onion on the butter, then add the other vegetables and steam them under a lid.
  • Add the broth and stir.
  • Cook it under a lid until the vegetables are completely  soft.
  • Pour the soup into a mixer or use a hand blender to mash the vegetables.
  • Season it with salt and pepper to taste.
  • Serve it with toast.
