Cream of asparagus soup
Ingredients:
- 500 g white asparagus
- 1,5 l broth
- 1 onion
- 2 medium sized potato
- 30 g butter
- Salt, pepper
How to make it:
- Peel and rinse the vegetables. Chop them up to small pieces. Cut off the woody ends of the asparagus and throw them away.
- Sauté the onion on the butter, then add the other vegetables and steam them under a lid.
- Add the broth and stir.
- Cook it under a lid until the vegetables are completely soft.
- Pour the soup into a mixer or use a hand blender to mash the vegetables.
- Season it with salt and pepper to taste.
- Serve it with toast.
