Vegan chili con carne

Ingredients:

  • 2 onions
  • 2 cloves of garlic
  • 500 g can of red beans
  • 300 g can of corn
  • 300 g can of peeled, chopped tomatoes
  • 1 dl tomato purée
  • 2 ts oregano
  • 2-3 ts chili powder
  • 1 dl dry red wine (optional)
  • 2-3 tbs chili con carne seasoning
  • salt, pepper, cinnamon to taste

How to make it:

  • Sauté the finely chopped onions on oil.
  • Add the finely chopped, or pressed garlic, the chili powder and the wine.
  • Stir it and add the beans and the spices.
  • Add the tomato products and bring it to a boil.
  • Cook it under a lid for 5-10 minutes, then add the corn. Cook for another few minutes until it thickens.
  • Serve it with rice or on it's own.
