Vegan chili con carne
Ingredients:
- 2 onions
- 2 cloves of garlic
- 500 g can of red beans
- 300 g can of corn
- 300 g can of peeled, chopped tomatoes
- 1 dl tomato purée
- 2 ts oregano
- 2-3 ts chili powder
- 1 dl dry red wine (optional)
- 2-3 tbs chili con carne seasoning
- salt, pepper, cinnamon to taste
How to make it:
- Sauté the finely chopped onions on oil.
- Add the finely chopped, or pressed garlic, the chili powder and the wine.
- Stir it and add the beans and the spices.
- Add the tomato products and bring it to a boil.
- Cook it under a lid for 5-10 minutes, then add the corn. Cook for another few minutes until it thickens.
- Serve it with rice or on it's own.
