Indian chicken-curry with coconut
Ingredients:
- 500 g chicken breast fillet
- 1 bouillon cube
- 50 g shredded coconut
- raisins (optional)
- curry seasoning
- 2 dl cooking cream
- salt, pepper to taste
How to make it:
- Cut up the chicken into small cubes, season it with salt and pepper, then brown it on some refined coconut oil.
- Add 1,5 dl water and the bouillon cube. Cook for 5-10 minutes.
- Add the curry seasoning, the shredded coconut and the raisins (as much as you like). Cook until it thickens.
- Turn the heat to low and add the cooking cream.
- Stir it frequently until it thickens up again.
- Serve it with rice or steamed veggies.
