Indian chicken-curry with coconut

Ingredients:

  • 500 g chicken breast fillet
  • 1 bouillon cube
  • 50 g shredded coconut
  • raisins (optional)
  • curry seasoning
  • 2 dl cooking cream
  • salt, pepper to taste

How to make it:

  • Cut up the chicken into small cubes, season it with salt and pepper, then brown it on some refined coconut oil.
  • Add 1,5 dl water and the bouillon cube. Cook for 5-10 minutes.
  • Add the curry seasoning, the shredded coconut and the raisins (as much as you like). Cook until it thickens.
  • Turn the heat to low and add the cooking cream.
  • Stir it frequently until it thickens up again.
  • Serve it with rice or steamed veggies.
