Chinese chicken with rice noodles
Ingredients:
- 500 g chicken breast fillet
- 1 package of rice noodles
- 2 spring onions
- 2 carrots
- 2 cloves of garlic
- 2 eggs
- 1 tbs of soy sauce
- 3 tbs flour
- juice of half of a lime
- 1 tsp minced ginger
- sweet chili sauce
- salt, pepper and chili flakes to taste
How to make it:
- Rinse the chicken breast and cut it up to small cubes.
- Whisk the eggs in a bowl with the soy sauce, add in the flour and stir until it's smooth.
- Coat the chicken with the egg mixture, then fry them in some oil, until they're golden brown.
- Simmer the garlic in the same oil, then add in the veggies.
- Add the ginger, the lime juice and if you want some extra heat, add some chili flakes.
- Don't overcook the veggies, the dish is more authentic if they're a little crunchy.
- Put the chicken back into the pan and add 1-2 tbs of sweet chili sauce.
- Stir to combine, cook for another few minutes and you're done!
- Now all that's left to do, is to cook up some rice noodles according to the packaging. (They cook really fast, so I only put them in when i'm done with everything else, so I don't accidentally overcook them.)
