Lemon pie

Ingredients:

  • 180 g wholemeal flour
  • 150 g sugar
  • 2 tbs lemon zest
  • juice of 3 lemons
  • 1 pack of baking powder (12 g)
  • pinch of salt
  • 3 whole eggs
  • 100 g melted butter

How to make it:

  • Mix the flour and the baking powder together.
  • Grease the inside of your baking pan with butter and sprinkle some flour on it.
  • Combine the eggs with the sugar, the salt and the lemon zest, and whip until it's foamy. Gradually add the lemon juice and the butter alternately.
  • Combine with the flour and mix gently so the foam doesn't collapse.
  • Bake for about 40 minutes on 170 °C.

Egg white foam on top:

  • You can decorate the top of your pie with some egg white foam.
  • For this, whip 2 egg whites almost completely. Before it becomes firm, add 8 tbs of powdered sugar and 2 tbs of lemon juice, and whip completely.
  • When the pie is almost done, spread the foam on top and put it back into the oven for a few minutes, until the foam becomes a little brown.
