Cocoa-Cranberry muffin

Ingredients:

  • 1 whole egg
  • 140 g brown sugar
  • 3 dl milk
  • 1/2 dl (olive) oil
  • 260 g wholegrain flour
  • 8 tbs unsweetened cocoa powder (optional)
  • 2 ts baking powder
  • 1 ts baking soda
  • 100 g dried red cranberries

How to make it:

  • In a big bowl, mix together the flour, the baking powder, the baking soda and the cocoa powder.
  • In a separate bowl, mix the egg with the sugar, the oil and half of the milk.
  • Add the mixture to the dry ingredients and stir to combine, adding the rest of the milk in gradually.
  • When the batter is smooth, add in the cranberries.
  • Preheat the oven to 180 °C and bake for about 30-40 minutes.
