Cocoa-Cranberry muffin
Ingredients:
- 1 whole egg
- 140 g brown sugar
- 3 dl milk
- 1/2 dl (olive) oil
- 260 g wholegrain flour
- 8 tbs unsweetened cocoa powder (optional)
- 2 ts baking powder
- 1 ts baking soda
- 100 g dried red cranberries
How to make it:
- In a big bowl, mix together the flour, the baking powder, the baking soda and the cocoa powder.
- In a separate bowl, mix the egg with the sugar, the oil and half of the milk.
- Add the mixture to the dry ingredients and stir to combine, adding the rest of the milk in gradually.
- When the batter is smooth, add in the cranberries.
- Preheat the oven to 180 °C and bake for about 30-40 minutes.
