Almond-oatmeal cookies

Ingredients:

  • 200 g oatmeal
  • 250 g wholemeal flour
  • 130 g brown sugar
  • 300 g butter (margarine)
  • 10 tbs honey
  • 1 ts baking soda
  • 2 ts cinnamon
  • 1 dl milk
  • 2 ts almond-flavoring
  • 100 g sliced almonds

How to make it:

  • Melt the butter together with the honey, then add the sugar and the almond flavoring to it.
  • Mix the dry ingredients and pour the butter-mixture into it. Add the milk and mix it until it smooth.
  • Add the sliced almonds.
  • Cover the batter and put it in the fridge for an hour.
  • Preheat the oven to 180 °C.
  • Make the batter into little balls the size of walnuts. Put them on a baking sheet lined with baking paper. Keep at least a 5 cm distance between the balls, so they won't stick together when baking.
  • Bake for 10-12 minutes, until the edges start to darken.
